I did uncover some butternut squash that had been covered by some mint gone wild.

You sure do make the most of your lot, Kate. I had never seen an unripened butternut before -- it never occurred to me that they go through a green stage like everything else! They're my second favorite squash, and acorn is third.
Next season you might consider planting some delicata -- my favorite squash because it needs to sweetener or butter to make it as yummy as dessert!
